Springtime Rhubarb

What says springtime any better than a good stand of rhubarb? Our rhubard has come up and looks healthy and yummy. I'll cut the ruby red stems into small pieces and freeze them for moist summer cakes and tangy/sweet winter pies.

Rhubarb Cake

1 1/2 cup brown sugar

1/2 cup butter

1 egg

1/2 tsp. salt

1 cup buttermilk

1 tsp. soda

1/2 tsp. baking powder

1 tsp. vanilla extract

2 1/4 cups flour

1 1/2 cup diced rhubarb

Topping:

1/4 cup sugar

1 tsp. cinnamon

1 tsp. nutmeg

Cream sugar, butter, egg, and salt. Stir in buttermilk, soda, vanilla, and flour. Add rhubarb and beat well. Pour into well-greased 9 x 13" cake pan. Sprinkle with topping. Bake at 375 degrees F. for 35 minutes or until toothpick comes out clean.

  4. I love rhubarb too and, for some reason, the last two lots that I planted failed miserably. They rotted at the crown. I'll have to try again. Maybe I don't need to plant them so deep to prevent them from getting too damp. Oh well, maybe next time. :D

  6. MMM that sounds delicious! I know my husband always loves to go home to Indiana because he loves his grandmother's rhubarb pies! I think I'm gonna have to learn to make them for him! Will definitely have to try out your cake recipe too. Hope you have a blessed day!

    I'm a HUGE fan of strawberry rhubard custard pie. Hubby is never the same in the days following this special treat at our house. In fact, I dare say "all-things rhubard captivate him"!

    Now I've got new ammunition.

  15. Pat- Sometimes I find beautiful red rhubarb at Safeway and other grocery stores. You may find some trucked into your area.

  16. How funny! Last night I made a raspberry/apple pie and Mike asked me to promise him that I would make him a fresh rhubarb pie! I promised I'd make a strawberry rhubarb pie as a compromise! Can you save me some rhubarb?

  17. I just planted rhubarb this week ... and have to wait a year or two to enjoy the harvest ... but it will be well worth the wait.

  22. I was at the store earlier today and just thinking about the fact that I wish we had some rhubarb growing in my yard... I was always picking rhubarb as a kid...Loved to eat it raw!!!

  23. Thank you for posting this recipe. I made this cake quite often in the 70's and 80's but have since lost the recipe and really didn't think about it. I'm anxious to try it again. I lost your website and was so sad. I looked for about an hour and finally found it. I Love your beautiful blog. It is so peaceful and beautiful. Thank you for your posts.

  27. Some how over the years, and my husband moving my rhubarb so often, I no longer have any. He did order some plants through the mail order, but they haven't arrived yet. I like to make a sauce and it's very good over vanilla ice cream.
